Two facts and a question.

FACT: A 10-lb pork shoulder makes more pulled pork than you'd think.

FACT: Eating pulled pork at every meal for a week is not as good as you'd expect.

QUESTION: Does anyone know how well cooked meat freezes?

Ditto on Mom"s comment. Cooked meat freezes well and lasts a long time as long as it's wrapped sufficiently. If we lived closer I'm sure you'd have some relatives who would be more than happy to help you out so you'd never have to freeze anything!
